Le Relais Du Castelet

At Le Relais du Castelet, the relationship between chef and landscape is not constructed for the restaurant. It is inherited.

Jean-Baptiste Bert was born on the Domaine du Castelet, a 12th-century mas standing between Fontvieille and the Abbaye de Montmajour. After developing his career as a cook, he returned to the family property to write a new chapter in its history: an intimate Provençal table shaped by the land that first formed him.

The approach begins before guests reach the dining room. A narrow track passes through olive groves toward a low stone building with little visible signage. In summer, tables are arranged beneath the shade at the edge of the kitchen garden. In cooler months, the restaurant moves indoors, where stone walls and worn materials retain the atmosphere of the old hunting lodge without turning it into decoration.

Bert’s cooking follows the seasons of the potager and the work of a close network of Alpilles and Camargue producers. Vegetables and aromatic herbs are given the same importance as meat or fish, while regional ingredients are treated with contemporary precision. A dessert combining poached peach, salted-almond sablé, smoked Crau-hay ice cream, pistachio and fig oil illustrates the kitchen’s approach: technically considered, but legible through the landscape around it.

The evening experience follows a set multi-course format, closer to a table d’hôtes than a conventional restaurant. Guests accept the rhythm of the kitchen and the produce available that day.

NOTES includes Le Relais du Castelet because it offers a rare continuity between family history, agricultural land and contemporary cooking. Bert does not merely source from Provence; he cooks from the place to which he belongs.
