Run by Caroline and Guilhem Baillaud since 2022, Edú occupies a former nursery garden on the edge of Saint Rémy de Provence. Built around a fixed menu of sharing plates, wood-fired cooking and a deeply Provençal sense of hospitality, it has become one of the Alpilles’ most loved gathering places, where long lunches and convivial dinners unfold beneath cypress trees and a vine-covered arbour.
Some restaurants are remembered for a chef. Others for a dish. Edú is remembered for how it makes people feel.
The restaurant occupies a former plant nursery, a detail that still shapes its atmosphere today. A long terrace unfolds around a stone basin shaded by cypress trees, while diners gather beneath a vine-covered arbour that feels more like a private garden than a commercial restaurant. Before becoming a place to eat, this was a place where things grew. In many ways, it still is.
Caroline and Guilhem Baillaud took over the restaurant in 2022, preserving the identity established under the name Edú while making it unmistakably their own. Guilhem, originally from Montpellier, has cooked since the age of fourteen, working in fine dining, culinary competitions and traditional French kitchens before arriving in Provence in 2010. Caroline, a native of Saint-Rémy, comes from a background in upholstery and textiles and brings an instinctive understanding of hospitality, aesthetics and Provençal art de vivre.
Their concept is remarkably simple. The menu is built around sharing. Guests order a succession of small plates at their own pace, creating a meal that resembles a Mediterranean family gathering more than a conventional restaurant service. Panisses de Marseille, poutargue with house focaccia, marinated fish, Camargue rice cooked in crab broth, seasonal vegetables roasted over wood fire and hand-made pizzettes emerge from the kitchen throughout the evening.
The magazine produced by the restaurant reveals the philosophy behind every dish: not culinary performance but generosity. Every ingredient is explained, every producer acknowledged and every recipe presented as an invitation to share.
NOTES includes Edú for its rare ability to embody the spirit of contemporary Provence: generous without being rustic, refined without being formal and deeply rooted in the culture of gathering around a table.
