Opened in 2023 in the historic centre of Aix en Provence, Les Galinas was founded by three young partners determined to bring traditional Provençal cooking back into everyday dining. Named after a Provençal expression for “big boys,” the restaurant focuses on regional recipes, local suppliers and straightforward execution rather than culinary spectacle.

Les Galinas began with a simple observation: despite being one of Provence’s cultural capitals, Aix-en-Provence offered relatively few restaurants devoted to the region’s own culinary traditions. Rather than creating another contemporary bistro or globally influenced menu, the founders chose to focus on dishes deeply rooted in Provençal domestic cooking.

Opened in 2023 by chef Florent Mondejar and his partners, the restaurant occupies a modest space on a quiet street in the old town. The atmosphere is deliberately uncomplicated, allowing attention to remain on the cooking and the producers behind it. Suppliers are named openly, local sourcing is treated as a core principle rather than a marketing tool, and the menu draws heavily from recipes more commonly associated with family kitchens than restaurant dining rooms.

Dishes such as aïgo boulido, daube provençale, aïoli and lamb tripe reflect a culinary repertoire that once formed part of everyday life across Provence. The kitchen’s approach is not nostalgic, however. Traditional recipes are prepared with precision and restraint, avoiding both excessive reinterpretation and folkloric presentation.

The restaurant’s reception suggests the concept has resonated. Less than two years after opening, Les Galinas received a Michelin Bib Gourmand and earned recognition from Gault & Millau, establishing itself as one of the most credible contemporary expressions of Provençal cooking in Aix.
