Aix-en-Provence has long been associated with art, architecture and intellectual life, yet it has also become one of the most dynamic culinary destinations in Provence. Étude represents a new generation of restaurants helping to define that evolution.

Chef Loïc Pétri returned to his native region after training in some of France's most demanding kitchens, including those of Joël Robuchon and Jean-François Piège. Since opening the restaurant in 2019 and later evolving it into Étude, he has developed a style of cooking that balances technical discipline with a strong sense of place.

The experience is intentionally intimate. Guests are received in a small dining room where the kitchen remains closely connected to the meal itself, creating an atmosphere that feels personal rather than formal. Seasonal ingredients form the foundation of the menu, while Pétri's use of oils, spices and unexpected combinations introduces complexity without losing clarity.

Awarded a Michelin star in 2025, Étude has quickly established itself as one of the most distinctive tables in Aix. Yet what makes it noteworthy is not recognition alone. The restaurant reflects a broader movement within contemporary Provençal gastronomy — one that respects regional ingredients while remaining open to experimentation and new ideas.
