Chez Fonfon

Chez Fonfon occupies a place where Marseille’s culinary and maritime histories meet. Set directly on the Vallon des Auffes, a small fishing port beneath the Corniche Kennedy, the restaurant remains closely connected to the working culture from which bouillabaisse emerged. Long before it became a celebrated regional dish, bouillabaisse was a practical fishermen’s meal, prepared from unsold rock fish brought back to shore at the end of the day.

That connection remains central to understanding Chez Fonfon. Founded in 1952 by Alphonse “Fonfon” Mounier, a fisherman who transformed a modest harbour bar into a restaurant, the establishment grew alongside the port itself. The boats moored outside, the stone quays and the surrounding fishermen’s houses continue to provide the setting in which the restaurant’s identity makes sense.

Its broader significance comes from its role in preserving Marseille’s culinary traditions. Chez Fonfon was among the founding signatories of the 1980 Bouillabaisse Charter, an effort to define and protect the preparation of the city’s most famous dish. At a moment when bouillabaisse risked becoming a simplified tourist specialty, the charter reaffirmed its connection to Mediterranean fish, local knowledge and established methods.
