Rooted in the medicinal gardens of the Dominican friars of Santa Maria Novella, the Officina has prepared remedies, fragrances and botanical products on the same site for centuries. Opened to the public in 1612, it represents an extraordinary continuity between monastic knowledge, Florentine craftsmanship and the modern world of perfumery.

Notes Review

Few places in Florence demonstrate continuity as completely as the Officina Profumo-Farmaceutica di Santa Maria Novella. Its origins reach back to 1221, when Dominican friars established themselves beside the Basilica of Santa Maria Novella and began cultivating medicinal herbs for the care of their community. Over time, this practical knowledge evolved into one of Europe’s most enduring centres of botanical, pharmaceutical and perfumery production.

The institution’s significance lies not in a single product but in the survival of an entire tradition. Remedies, herbal preparations and fragrances developed within the convent gradually gained a wider reputation beyond Florence. By the early seventeenth century the Officina had opened to the public, while its association with the Medici court helped establish its standing within Renaissance Europe. Among its most celebrated creations is Acqua della Regina, traditionally linked to Caterina de’ Medici and often regarded as one of the earliest alcohol-based perfumes.

The setting remains inseparable from the experience. Former chapels, sacristies and apothecary rooms have been adapted rather than replaced, allowing visitors to move through spaces where commercial activity and cultural heritage coexist. Frescoes, vaulted ceilings, historic furnishings and centuries of accumulated objects reinforce the sense that the building functions simultaneously as workshop, archive and monument.

What distinguishes Santa Maria Novella within Florence is the continuity between knowledge and place. It remains a rare example of a craft institution whose products, architecture and purpose all emerge from the same historical tradition. More than a perfumery, it is a living record of eight centuries of Florentine botanical and pharmaceutical culture.
