La Chassagnette

The Camargue is a landscape shaped by water, salt, wind and agriculture. Rice fields, marshes, grazing land and wetlands define a territory unlike any other in Provence. La Chassagnette belongs entirely to this environment.

When chef Armand Arnal arrived in 2006 after working under Alain Ducasse in New York, he recognised that the strength of the place lay not in reinventing it but in working more closely with its surroundings. The result is a restaurant whose identity is rooted in a three-hectare organic garden located only a few steps from the kitchen.

More than two hundred varieties of fruits, vegetables, herbs and spices are cultivated on the property. The garden supplies the rhythm of the restaurant, shaping menus according to season, harvest and availability rather than fixed recipes. Orchards, beehives and an unusual tropical greenhouse further extend the agricultural life of the estate.

The restaurant has been recognised with both a Michelin star and a Michelin Green Star, acknowledging not only the quality of the cooking but also its commitment to sustainable practices. Yet the significance of La Chassagnette extends beyond awards.

What distinguishes the restaurant is the direct relationship between cultivation and cuisine. The garden is not decorative, nor a gesture toward sustainability. It is the operational centre of the restaurant and the source of its identity. Few places express the landscape of the Camargue with such clarity.
